“Traditional Afghani Dampukht Recipe – A Flavorful Feast”

Discover the rich and aromatic flavors of traditional Afghani Dampukht with this step-by-step recipe. This slow-cooked dish is perfect for special occasions and family gatherings.

Ingredients:

  • 1 kg lamb or beef, cut into large pieces
  • 3 large onions, thinly sliced
  • 2 tomatoes, chopped
  • 1 cup yogurt
  • 1/2 cup cooking oil or ghee
  • 4 cloves garlic, minced
  • 2 tablespoons ginger paste
  • 1 tablespoon cumin seeds
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon black pepper
  • Salt to taste
  • Fresh cilantro for garnish
  • 1 cup water or beef/lamb broth

Instructions:

  1. In a large pot, heat the cooking oil or ghee over medium heat. Add the cumin seeds and let them splutter.
  2. Add the sliced onions and sauté until golden brown.
  3. Add the minced garlic and ginger paste, and cook for 2-3 minutes until fragrant.
  4. Add the meat pieces to the pot and cook until browned on all sides.
  5. Stir in the chopped tomatoes, yogurt, coriander powder, turmeric powder, garam masala, black pepper, and salt. Mix well to coat the meat with the spices.
  6. Add water or broth, bring to a boil, then reduce the heat to low. Cover the pot tightly and let it simmer for 2-3 hours, stirring occasionally, until the meat is tender and the flavors are well blended.
  7. Once the meat is cooked, uncover the pot and cook on medium heat until the sauce thickens to your desired consistency.
  8. Garnish with fresh cilantro before serving.
