Ingredients:
- 500g mutton pieces
- 2 onions, finely chopped
- 2 tomatoes, diced
- 3 potatoes, peeled and cubed
- 2 carrots, sliced
- 1 bell pepper, chopped
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 tablespoons cooking oil
- Fresh cilantro leaves for garnish
Instructions:
- Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions, garlic, ginger, and green chilies. Sauté until onions turn golden brown.
- Add mutton pieces to the pot and cook until they are browned on all sides.
- Stir in diced tomatoes and cook until they soften and release their juices.
- Add coriander powder, turmeric powder, red chili powder, and salt to taste. Mix well to coat the mutton pieces with the spices.
- Pour in enough water to cover the mutton pieces. Bring to a boil, then reduce heat to low and let it simmer for 1 hour or until the mutton is tender.
- Once the mutton is tender, add cubed potatoes, sliced carrots, and chopped bell pepper to the pot. Simmer for another 20-25 minutes or until the vegetables are cooked through.
